I have worked with Scrum and other tracking proprietary tools in past studios. My last job didn't have any project tracking at all so it was all on me to make sure I set milestones for myself and allow myself the proper buffer times to accomplish my tasks. I also added that I've been using all my free time leading up to the interview familiarizing myself with the project tracking systems mentioned in the job description.
